Taste of childhood, the crunchy thin waffles. Luckily we have thin waffle iron made by Ide Line. I don’t even remember where did we got it from. Normally Mrs does the waffles, but tonight I gave it a go myself. I found thin waffle recipe here,┬áit is in Latvian and does not have Vodka in the recipe. You can leave Vodka out, but I believe adding a dash of it makes waffles more crunchy.


Ingredients

    Eggs
  • 1 Cup
    Sugar
  • 200 Grams
    Butter
  • Vanilla Extract
  • 2 Cups
    Flour
  • 2 Tablespoons
    Potato Flour
  • 1 Tablespoon
    Vodka

Instructions

  1. Beat eggs together with sugar.

  2. Melt butter and then add to the eggs with sugar and mix.

  3. Sift in flour while mixing.

  4. Add potato flour and vodka. Add a bit of vanilla extract to the taste. Mix well.

  5. Pre-heat waffle maker and spray surfaces with a little oil.

  6. Pour large spoon of mixture on the surface of waffle maker, press closed and cook until golden brown. Once ready, remove and roll up while the waffle is soft. Experiment with amount so the waffle takes almost all surface without mixture squeezing out.

  7. You can fill waffles with cooked condensed milk. Yummy. Or don't fill with anything. Store in airtight container to keep crispy.
